Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1/2 teaspoon red pepper flakes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/2 cup heavy cream
  • 3 cups baby spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 lb. pasta of your choice
  • Grated Parmesan cheese, for serving

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the red pepper flakes and cook for 30 seconds.
  4. Add the cherry tomatoes and cook for 1 minute.
  5. Add the white wine and cook for 1 minute.
  6. Add the cream and simmer for 2 minutes.
  7. Add the spinach and cook until wilted, about 2 minutes.
  8. Season with salt and pepper.
  9. Meanwhile, bring a pot of salted water to a boil and cook the pasta according to the package instructions.
  10. Drain the pasta and add it to the skillet with the sauce.
  11. Toss to combine and cook for 1 minute.
  12. Serve with grated Parmesan cheese.
