Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 2 cups cooked white rice
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion, garlic, and bell pepper, and cook until the vegetables are softened, about 5 minutes.
  3. Add the peas, rice, parsley, and thyme to the skillet, and stir to combine.
  4. Season with salt and pepper, to taste.
  5. Cook until the rice is heated through and the vegetables are cooked, about 10 minutes.
  6. Serve hot.
