Ingredients
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup frozen peas
- 2 cups cooked white rice
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
Directions
- Heat the oil in a large skillet over medium-high heat.
- Add the onion, garlic, and bell pepper, and cook until the vegetables are softened, about 5 minutes.
- Add the peas, rice, parsley, and thyme to the skillet, and stir to combine.
- Season with salt and pepper, to taste.
- Cook until the rice is heated through and the vegetables are cooked, about 10 minutes.
- Serve hot.
