Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 medium zucchini, diced
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
Directions
- Preheat the oven to 375 degrees F.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 3 minutes.
- Add the zucchini, Italian seasoning, and salt and pepper and cook for an additional 5 minutes, stirring occasionally.
- Remove the skillet from the heat and stir in the mozzarella and cheddar cheeses.
- Transfer the mixture to an 8-inch baking dish and sprinkle with the Parmesan cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbling.
- Serve warm.
