Ingredients
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
3 medium zucchini, diced
1/2 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
Directions
Preheat the oven to 375 degrees F.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 3 minutes.
Add the zucchini, Italian seasoning, and salt and pepper and cook for an additional 5 minutes, stirring occasionally.
Remove the skillet from the heat and stir in the mozzarella and cheddar cheeses.
Transfer the mixture to an 8-inch baking dish and sprinkle with the Parmesan cheese.
Bake for 20 minutes, or until the cheese is melted and bubbling.
Serve warm.
