In a medium saucepan over medium heat, combine the cranberries, sugar, water, cinnamon, nutmeg, allspice and cloves. Cook, stirring occasionally, until the cranberries have softened and the mixture has thickened, about 10 minutes.
Transfer the cranberry mixture to a medium bowl and let cool completely.
In a large bowl, whip the cream, confectioners' sugar and vanilla extract until stiff peaks form. Fold in the walnuts.
To assemble the parfaits, layer the cranberry mixture and whipped cream in 8-ounce glasses or ramekins. Serve chilled.
