Ingredients
- 2 pounds chicken thighs, bone-in and skin-on
- 1 onion, chopped

- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika

- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper, to taste

Directions
- Season the chicken thighs with salt and pepper.
- Set the Instant Pot to sauté mode and heat the olive oil.
- Add the chicken thighs, skin-side down, and cook until browned, about 4-5 minutes per side. Remove the chicken from the Instant Pot and set aside.
- In the same Instant Pot, add the chopped onion and garlic. Sauté until softened, about 2-3 minutes.
- Add the cumin, coriander, cinnamon, ginger, turmeric, and paprika. Stir well to coat the onions and garlic with the spices.
- Add the chopped dried apricots, green olives, chicken broth, honey, and lemon juice to the Instant Pot. Stir to combine.
