This Instant Pot Apricot Chicken Tagine is a quick and flavorful dish that combines the sweetness of apricots with the warm and aromatic spices of a traditional Moroccan tagine. The tender chicken is cooked to perfection in the Instant Pot, resulting in a dish that is both healthy and satisfying. Ingredients

  • 2 pounds chicken thighs, bone-in and skin-on
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/4 cup dried apricots, chopped
  • 1/4 cup green olives, pitted and halved
  • 1 cup chicken broth
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Directions

  1. Season the chicken thighs with salt and pepper.
  2. Set the Instant Pot to sauté mode and heat the olive oil.
  3. Add the chicken thighs, skin-side down, and cook until browned, about 4-5 minutes per side. Remove the chicken from the Instant Pot and set aside.
  4. In the same Instant Pot, add the chopped onion and garlic. Sauté until softened, about 2-3 minutes.
  5. Add the cumin, coriander, cinnamon, ginger, turmeric, and paprika. Stir well to coat the onions and garlic with the spices.
  6. Add the chopped dried apricots, green olives, chicken broth, honey, and lemon juice to the Instant Pot. Stir to combine.
  7. Return the chicken thighs to the Instant Pot, placing them on top of the mixture.
  8. Close the Instant Pot lid and set the valve to the sealing position.
  9. Cook on high pressure for 12 minutes, then do a quick release of the pressure.
  10. Once the pressure has released, carefully remove the lid and transfer the chicken thighs to a serving platter.
  11. Use a spoon to skim off any excess fat from the surface of the sauce.
  12. Taste the sauce and adjust the seasoning with salt and pepper, if needed.
  13. Serve the chicken thighs over a bed of fluffy couscous or with crusty bread, spooning the sauce over the top.
  14. Garnish with fresh chopped cilantro and enjoy!
