Ingredients

  • 1 cup cooked pumpkin puree
  • 3 eggs
  • 1/2 cup milk
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 2 cups shredded cheese
  • 1/2 cup chopped pecans
  • 1/2 cup diced apples
  • 1/2 cup diced cooked bacon
  • 1/4 cup dried cranberries

Directions

  1. Preheat oven to 350°F.
  2. In a bowl, mix together pumpkin, eggs, milk, maple syrup, cinnamon, nutmeg, ginger, and allspice.
  3. Spread cheese, pecans, apples, bacon, and cranberries in the bottom of a greased 9x13-inch baking dish.
  4. Pour pumpkin mixture over the top, stirring to combine.
  5. Bake for 45 minutes, or until the top is lightly browned and a knife inserted into the center comes out clean.
