Thai Chicken Pizza with Carrots and Cilantro

Ingredients

  • 2 tablespoons vegetable oil
  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Thai red curry paste
  • 1 large boneless, skinless chicken breast, cut into thin strips
  • 1/2 cup carrots, grated
  • 1/4 cup cilantro, chopped
  • 1 ready-made pizza crust
  • 1/2 cup mozzarella cheese, grated
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Preheat oven to 425°F (220°C).
  2. Heat oil in a large skillet over medium heat. Add onion and garlic and cook, stirring, for 2 minutes.
  3. Add curry paste and cook, stirring, for 1 minute.
  4. Add chicken and carrots and cook, stirring, for 5 minutes, or until chicken is cooked through.
  5. Add cilantro and cook, stirring, for 1 minute.
  6. Place pizza crust on a baking sheet. Top with chicken mixture, mozzarella, and Parmesan cheese.
  7. Bake for 10 minutes, or until cheese is melted and bubbly and crust is golden brown.
  8. Remove from oven and let cool for 5 minutes before slicing and serving.
