Ingredients

  • 1 cup quinoa, uncooked
  • 1 cup steel-cut oats, uncooked
  • 3 tablespoons coconut oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup dried fruit (optional)

Directions

  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the quinoa, oats, coconut oil, honey or maple syrup, cinnamon, and salt. Stir until everything is evenly combined.
  3. Spread the mixture onto the prepared baking sheet and spread evenly.
  4. Bake in preheated oven for 15-20 minutes, or until granola is golden brown. Stir the granola every 5 minutes to ensure even baking.
  5. Remove from oven and let cool. Once cooled, stir in nuts and dried fruit if desired.
  6. Store in an airtight container for up to 2 weeks.
