Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vegetable oil
  • 1 (14-ounce) can cream-style corn
  • 1/4 cup freshly grated Parmesan cheese
  • Vegetable oil, for frying

Directions

  1. In a large bowl, combine the flour, baking powder, salt, and pepper. Whisk to combine.
  2. In a separate bowl, whisk together the milk, egg, and oil. Add to the dry ingredients and mix until just combined.
  3. Stir in the cream-style corn and cheese. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Using a 1/4-cup measure, scoop the batter into the hot oil and flatten slightly with the back of a spoon. Fry until golden brown, about 3 minutes per side.
