Ingredients

  • 1/2 cup warm milk
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup sugar
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 cup light brown sugar

Directions

  1. In a large bowl, combine the milk, yeast, and sugar. Stir and let sit for 10 minutes until it's foamy.
  2. Add the flour, salt, and eggs to the bowl and mix until a dough forms.
  3. Knead the dough for 5 minutes until it's smooth and elastic. Cover the bowl with a damp towel and let the dough rise for one hour.
  4. In a separate bowl, combine the butter, pumpkin puree, cinnamon, nutmeg, allspice, and brown sugar and mix until combined.
  5. Roll out the dough on a lightly floured surface into a 12-inch by 12-inch square.
  6. Spread the pumpkin mixture over the dough and roll it up into a log.
  7. Cut the log into 12 equal pieces and place them in a greased 9-inch round cake pan.
  8. Cover the pan with a damp towel and let the dough rise for 30 minutes.
  9. Preheat the oven to 350 degrees F and bake the brioche for 25-30 minutes until golden brown.
  10. Cool for 10 minutes before serving.
