Ingredients
- 1 cup dry lentils
- 1/2 cup salsa
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup shredded cheese
- 1/4 cup chopped green onions
- 1/4 cup sliced jalapenos
- 1/4 cup black olives
- 1/4 cup diced tomatoes
- 1/4 cup sour cream
- 1/4 cup guacamole
- 1/4 cup chopped cilantro
- 1 bag tortilla chips
Directions
- In a medium pot, combine the lentils, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Bring to a boil, reduce heat, and simmer for 20 minutes or until the lentils are cooked.
- Preheat the oven to 375°F (190°C).
- Spread the tortilla chips on a baking sheet and top with the cooked lentils. Sprinkle the cheese over the lentils.
- Bake for 10 minutes or until the cheese is melted.
- Top with the green onions, jalapenos, black olives, tomatoes, sour cream, guacamole, and cilantro. Serve immediately.
