Ingredients

  • 1 cup dry lentils
  • 1/2 cup salsa
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup shredded cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sliced jalapenos
  • 1/4 cup black olives
  • 1/4 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/4 cup chopped cilantro
  • 1 bag tortilla chips

Directions

  1. In a medium pot, combine the lentils, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Bring to a boil, reduce heat, and simmer for 20 minutes or until the lentils are cooked.
  2. Preheat the oven to 375°F (190°C).
  3. Spread the tortilla chips on a baking sheet and top with the cooked lentils. Sprinkle the cheese over the lentils.
  4. Bake for 10 minutes or until the cheese is melted.
  5. Top with the green onions, jalapenos, black olives, tomatoes, sour cream, guacamole, and cilantro. Serve immediately.
