Ingredients

  • 3 cups sweetened shredded coconut
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar

Directions

  1. Preheat the oven to 350°F (175°C). Grease a baking sheet with cooking spray or line with parchment paper.
  2. In a large bowl, combine the coconut, flour, baking powder, and salt. Stir until evenly mixed.
  3. In a separate bowl, mix together the condensed milk, vanilla, and sugar. Stir until the sugar is dissolved.
  4. Add the wet ingredients to the dry ingredients and mix until combined. The dough should be thick and sticky.
  5. Drop by spoonfuls onto the prepared baking sheet. Bake for 15-20 minutes, or until lightly golden brown.
  6. Remove from the oven and allow to cool before serving.
