Ingredients
- 3 cups sweetened shredded coconut
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 3/4 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 cup sugar
Directions
- Preheat the oven to 350°F (175°C). Grease a baking sheet with cooking spray or line with parchment paper.
- In a large bowl, combine the coconut, flour, baking powder, and salt. Stir until evenly mixed.
- In a separate bowl, mix together the condensed milk, vanilla, and sugar. Stir until the sugar is dissolved.
- Add the wet ingredients to the dry ingredients and mix until combined. The dough should be thick and sticky.
- Drop by spoonfuls onto the prepared baking sheet. Bake for 15-20 minutes, or until lightly golden brown.
- Remove from the oven and allow to cool before serving.
