Ingredients
- 2 cups grated carrots
- 1/2 cup raisins
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley
Directions
- In a large bowl, combine the grated carrots and raisins.
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the carrots and raisins and mix until evenly coated.
- Refrigerate the salad for at least 30 minutes before serving.
- Just before serving, sprinkle the chopped parsley over the top.
