Ingredients

  • 4 ears of corn
  • 1/2 cup of mayonnaise
  • 1/4 cup of grated Parmesan cheese
  • 1/4 teaspoon of chili powder
  • 1 lime, quartered
  • Salt and pepper to taste

Directions

  1. Preheat an outdoor grill to medium-high heat, or preheat an indoor grill pan over medium-high heat.
  2. Carefully remove the husks and silk from the corn, and place the ears of corn on the preheated grill.
  3. Grill for 8-10 minutes, turning occasionally, until the corn is lightly charred and tender.
  4. Remove the ears of corn from the grill and set aside to cool.
  5. Cut the kernels from the cob and place in a medium bowl.
  6. Add the mayonnaise, Parmesan cheese, chili powder, and lime juice to the bowl with the corn.
  7. Stir the ingredients together until the corn is evenly coated.
  8. Season with salt and pepper to taste.
  9. Serve warm in individual cups or on a plate.
