Ingredients
- 4 ears of corn
- 1/2 cup of mayonnaise
- 1/4 cup of grated Parmesan cheese
- 1/4 teaspoon of chili powder
- 1 lime, quartered
- Salt and pepper to taste
Directions
- Preheat an outdoor grill to medium-high heat, or preheat an indoor grill pan over medium-high heat.
- Carefully remove the husks and silk from the corn, and place the ears of corn on the preheated grill.
- Grill for 8-10 minutes, turning occasionally, until the corn is lightly charred and tender.
- Remove the ears of corn from the grill and set aside to cool.
- Cut the kernels from the cob and place in a medium bowl.
- Add the mayonnaise, Parmesan cheese, chili powder, and lime juice to the bowl with the corn.
- Stir the ingredients together until the corn is evenly coated.
- Season with salt and pepper to taste.
- Serve warm in individual cups or on a plate.
