- 1 loaf of olive bread, cut into 1/2-inch slices
- 1/4 cup olive oil
- 1 red bell pepper, diced
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 1 teaspoon honey
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- Fresh parsley, chopped (for garnish)
Directions
- Preheat oven to 350°F (175°C).
- Arrange slices of olive bread on a baking sheet.
- Drizzle olive oil over the bread slices and bake for 10 minutes until golden brown and crispy.
- Meanwhile, heat a small skillet over medium heat and add the red bell pepper, red onion, and minced garlic. Cook for 5 minutes until vegetables are tender.
- Add the honey, balsamic vinegar, red pepper flakes, sea salt, and black pepper to the skillet and stir to combine. Cook for an additional minute.
- Remove from heat and transfer the red pepper spread to a bowl.
- To assemble, spread a tablespoon of the red pepper spread over each crostini slice and top with chopped parsley.
- Serve immediately.
