Ingredients

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced red onion
  • 1/2 cup sliced cucumber
  • 1/2 cup sliced black olives
  • 1/4 cup sliced pepperoni
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Directions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, honey, garlic powder, onion powder, salt, and pepper. Set aside.
  2. In a large bowl, combine the lettuce, tomatoes, onion, cucumber, olives, pepperoni, mozzarella, and Parmesan cheese.
  3. Pour the dressing over the salad and gently toss to coat.
  4. Serve immediately.
