Ingredients

  • 1 cup couscous
  • 2 cups vegetable stock
  • 2 tablespoons olive oil
  • 1/2 teaspoon saffron threads
  • Salt and freshly ground black pepper, to taste

Directions

  1. In a medium pot, bring the vegetable stock to a boil over high heat.
  2. Add the couscous, olive oil and saffron. Stir to combine.
  3. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  4. Remove from heat and let stand for 5 minutes. Fluff with a fork.
  5. Season with salt and pepper, to taste.
  6. Serve warm.
