Ingredients

  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked diced potatoes
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 cup cooked and crumbled bacon
  • 1 cup shredded cheese

Directions

  1. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  2. In a 9x13 inch baking dish, layer the potatoes, bell pepper, onion, bacon, and cheese.
  3. Pour the egg mixture over the top.
  4. Cover and refrigerate overnight.
  5. When ready to bake, preheat the oven to 350 degrees F (175 degrees C).
  6. Uncover the casserole and bake for 40 minutes, or until the eggs are set and the cheese is melted and golden brown.
