1 package lasagna noodles, cooked according to package directions
2 cups shredded mozzarella cheese
Directions
Preheat oven to 350°F.
In a large skillet, cook turkey, onion, and mushrooms over medium heat, stirring occasionally, until turkey is cooked through and vegetables are tender. Add garlic powder, oregano, and basil and cook for 1 minute longer.
Stir in marinara sauce and simmer for 10 minutes, stirring occasionally.
In a bowl, mix together ricotta cheese, Parmesan cheese, parsley, and salt and pepper.
Spread a thin layer of the turkey and mushroom sauce in the bottom of a 9x13-inch baking dish.
Lay out 4 lasagna noodles, then spread each one with 1/4 of the ricotta cheese mixture.
Top each noodle with 1/4 of the turkey and mushroom sauce, then sprinkle with 1/4 of the mozzarella cheese.
Roll up each noodle and place seam-side down in the baking dish.
Top the lasagna rolls with remaining sauce and sprinkle with remaining mozzarella cheese.
Cover the dish with foil and bake for 25 minutes.
Remove foil and bake for an additional 10 minutes, until cheese is melted and bubbly.
Let cool for 5 minutes before serving.
