Ingredients
- 1 lb. ground turkey
- 1 large onion, diced
- 1 8-ounce package sliced mushrooms
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 28-ounce jar of your favorite marinara sauce
- 1 15-ounce container of ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1 package lasagna noodles, cooked according to package directions
- 2 cups shredded mozzarella cheese
Directions
- Preheat oven to 350°F.
- In a large skillet, cook turkey, onion, and mushrooms over medium heat, stirring occasionally, until turkey is cooked through and vegetables are tender. Add garlic powder, oregano, and basil and cook for 1 minute longer.
- Stir in marinara sauce and simmer for 10 minutes, stirring occasionally.
- In a bowl, mix together ricotta cheese, Parmesan cheese, parsley, and salt and pepper.
- Spread a thin layer of the turkey and mushroom sauce in the bottom of a 9x13-inch baking dish.
- Lay out 4 lasagna noodles, then spread each one with 1/4 of the ricotta cheese mixture.
- Top each noodle with 1/4 of the turkey and mushroom sauce, then sprinkle with 1/4 of the mozzarella cheese.
- Roll up each noodle and place seam-side down in the baking dish.
- Top the lasagna rolls with remaining sauce and sprinkle with remaining mozzarella cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes, until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
