Ingredients

  • 2 avocados
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup diced red onions
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil

Directions

  1. Preheat oven to 375 degrees F.
  2. Cut avocados in half and remove the pits.
  3. Scoop out the flesh of the avocados and place in a bowl.
  4. Add the cheese, red onions, tomatoes, cilantro, garlic powder, cayenne pepper, salt, and black pepper to the bowl.
  5. Mix together until all ingredients are evenly distributed.
  6. Spoon the mixture into each avocado half.
  7. Place the avocado halves on a baking sheet and drizzle with olive oil.
  8. Bake for 20-25 minutes, or until the cheese is melted and the tops of the avocado halves are lightly browned.
  9. Remove from oven and serve warm.
