Ingredients

  • 1 can (15 ounces) canned beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 3 cups chicken or vegetable broth
  • 3 packages (3 ounces each) ramen noodles
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)

Directions

  1. In a large saucepan, heat olive oil over medium heat.
  2. Add beans, tomatoes, Italian seasoning, and red pepper flakes. Cook for 5 minutes, stirring frequently.
  3. Stir in broth and bring to a boil. Reduce heat to low and simmer for 5 minutes.
  4. Add ramen noodles and cook for 5 minutes, stirring occasionally.
  5. Remove from heat and stir in Parmesan cheese. Serve garnished with fresh parsley, if desired.
