Ingredients

  • 2 lb potatoes, peeled and cut into 2-inch cubes
  • 1 onion, chopped
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 4 oz bacon, diced
  • 4 oz Gruyere cheese, grated
  • Salt and pepper, to taste
  • 2 tablespoons butter

Directions

  1. Preheat the oven to 375°F.
  2. In a large saucepan, bring the potatoes to a boil in lightly salted water and cook until just tender, about 10 minutes.
  3. Drain the potatoes and set aside.
  4. In a large skillet, melt the butter over medium heat. Add the onion, garlic, and bacon and cook until the bacon is crisp, about 5 minutes.
  5. Add the potatoes to the skillet and cook for another 5 minutes.
  6. Pour the cream over the potatoes and season with salt and pepper.
  7. Transfer the mixture to an oven-safe baking dish and top with the grated cheese.
  8. Bake for 25 minutes, or until the cheese is melted and bubbly.
  9. Serve hot.
