Mexican Flag Buffalo Chicken Enchiladas

Ingredients

  • 1 lb. chicken breasts, cooked and shredded
  • 1/2 cup buffalo sauce
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup red salsa
  • 1 cup green salsa
  • 1 cup shredded cheese
  • 8-10 small flour tortillas

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine the cooked and shredded chicken with buffalo sauce, sour cream, garlic powder, cumin, chili powder, paprika, salt, and pepper.
  3. In a separate bowl, mix together the red and green salsas.
  4. In a 9x13 inch baking dish, spread 1/2 cup of the salsa mixture on the bottom.
  5. Spoon 1/2 of the buffalo chicken mixture into the tortillas, roll them up, and lay them in the baking dish.
  6. Sprinkle 1/2 cup of the shredded cheese over the enchiladas.
  7. Top with the remaining salsa mixture, followed by the remaining buffalo chicken mixture, and then the remaining cheese.
  8. Bake for 25-30 minutes, or until cheese is melted and bubbly.
  9. Serve with a dollop of sour cream, if desired.
