Ingredients
- 1 lb. chicken breasts, cooked and shredded
- 1/2 cup buffalo sauce
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup red salsa
- 1 cup green salsa
- 1 cup shredded cheese
- 8-10 small flour tortillas
Directions
- Preheat oven to 350 degrees F.
- In a medium bowl, combine the cooked and shredded chicken with buffalo sauce, sour cream, garlic powder, cumin, chili powder, paprika, salt, and pepper.
- In a separate bowl, mix together the red and green salsas.
- In a 9x13 inch baking dish, spread 1/2 cup of the salsa mixture on the bottom.
- Spoon 1/2 of the buffalo chicken mixture into the tortillas, roll them up, and lay them in the baking dish.
- Sprinkle 1/2 cup of the shredded cheese over the enchiladas.
- Top with the remaining salsa mixture, followed by the remaining buffalo chicken mixture, and then the remaining cheese.
- Bake for 25-30 minutes, or until cheese is melted and bubbly.
- Serve with a dollop of sour cream, if desired.
