Ingredients

  • 2 tablespoons olive oil
  • 2 pounds ground bison
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 jalapeno peppers, chopped
  • 1 (14.5-ounce) can diced tomatoes, with juice
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 tablespoons Worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 pound bacon, cooked and crumbled

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the bison, onion, garlic, bell peppers and jalapeno peppers. Cook until the bison is no longer pink, about 8 minutes.
  2. Add the diced tomatoes, chili powder, cumin, Worcestershire sauce, cayenne pepper, salt and pepper. Stir to combine and bring to a simmer. Reduce heat to low and simmer for 30 minutes, stirring occasionally.
  3. Add the bacon and simmer for an additional 15 minutes.
