Ingredients
- 2 tablespoons olive oil
- 2 pounds ground bison
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 jalapeno peppers, chopped
- 1 (14.5-ounce) can diced tomatoes, with juice
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 tablespoons Worcestershire sauce
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 pound bacon, cooked and crumbled
Directions
- Heat the olive oil in a large pot over medium-high heat. Add the bison, onion, garlic, bell peppers and jalapeno peppers. Cook until the bison is no longer pink, about 8 minutes.
- Add the diced tomatoes, chili powder, cumin, Worcestershire sauce, cayenne pepper, salt and pepper. Stir to combine and bring to a simmer. Reduce heat to low and simmer for 30 minutes, stirring occasionally.
- Add the bacon and simmer for an additional 15 minutes.
