Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound chorizo, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 large zucchinis, cut into 1/2 inch thick slices
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup freshly chopped parsley, for garnish

Directions

  1. Preheat oven to 400°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the chorizo and cook for 5 minutes, stirring occasionally.
  3. Add the onion, garlic, and bell pepper and cook for an additional 5 minutes, stirring occasionally.
  4. Add the smoked paprika, cayenne pepper, oregano, cumin, salt, and pepper and cook for an additional 2 minutes, stirring frequently.
  5. Remove the skillet from the heat and set aside.
  6. Arrange the zucchini slices in a single layer on a baking sheet. Spoon the chorizo mixture onto each slice and top with Parmesan cheese.
  7. Bake in the preheated oven for 15 minutes, or until the zucchini is tender and the cheese is melted and golden.
  8. Garnish with freshly chopped parsley and serve.
