Ingredients
- 1 tablespoon olive oil
- 1/2 pound chorizo, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 2 large zucchinis, cut into 1/2 inch thick slices
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup freshly chopped parsley, for garnish
Directions
- Preheat oven to 400°F.
- Heat the olive oil in a large skillet over medium heat. Add the chorizo and cook for 5 minutes, stirring occasionally.
- Add the onion, garlic, and bell pepper and cook for an additional 5 minutes, stirring occasionally.
- Add the smoked paprika, cayenne pepper, oregano, cumin, salt, and pepper and cook for an additional 2 minutes, stirring frequently.
- Remove the skillet from the heat and set aside.
- Arrange the zucchini slices in a single layer on a baking sheet. Spoon the chorizo mixture onto each slice and top with Parmesan cheese.
- Bake in the preheated oven for 15 minutes, or until the zucchini is tender and the cheese is melted and golden.
- Garnish with freshly chopped parsley and serve.
