2 thick steaks, about 1 ½ inch thick
2 tablespoons of olive oil
Salt and pepper to taste
Directions
Preheat your oven to 250° F.
Season the steaks with salt and pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Add the steaks to the skillet and brown the steaks on both sides.
Place the skillet in the preheated oven and cook the steaks for 15-20 minutes, or until the internal temperature reaches 125° F.
Remove the skillet from the oven and turn the heat up to high.
Sear the steaks on both sides for 1-2 minutes, or until the steaks have a nice char.
Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Reverse searing is the perfect way to cook thick steaks.
The steaks should be cooked to an internal temperature of 125° F.
