Ingredients

  • 4 cups cold water
  • 2 (4-inch) pieces konbu seaweed
  • 1/2 cup bonito flakes

Directions

  1. In a large pot, bring the water to a boil over high heat.
  2. Add the konbu seaweed and reduce the heat to low.
  3. Simmer for 10 minutes.
  4. Remove the konbu seaweed and discard.
  5. Add the bonito flakes and simmer for 1 minute.
  6. Remove the bonito flakes and discard.
  7. Strain the broth through a fine-mesh sieve.
