Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 small carrot, shredded
  • 1 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/2 cup cooked corn
  • 1/2 cup chopped kale
  • 1/4 cup rolled oats
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • Salt to taste

Directions

  1. Heat the olive oil in a skillet over medium heat. Add the onion and carrot, and cook for 5 minutes, stirring occasionally.
  2. Add the cooked quinoa, black beans, corn, kale, oats, garlic, smoked paprika, cumin, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
  3. Remove the skillet from the heat and let cool slightly. Use a potato masher or a fork to mash the mixture together. Taste and season with salt as desired.
  4. Form the mixture into 8 patties and place on a parchment-lined baking sheet. Bake in a preheated 375°F oven for 15 minutes, flipping the patties halfway through.
  5. Serve the patties with your favorite toppings and condiments.
