Ingredients

  • 2 tablespoons olive oil
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon sea salt
  • 4 eggs
  • 1/4 cup crumbled feta cheese

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic to the skillet and cook, stirring occasionally, for 5 minutes.
  3. Add the bell peppers, zucchini, oregano, basil, red pepper flakes and salt to the skillet and cook, stirring occasionally, for 5 minutes.
  4. Create 4 wells in the skillet with a spoon and crack the eggs into them.
  5. Cover the skillet with a lid and reduce the heat to low. Cook for 5 minutes, or until the eggs are cooked to your desired doneness.
  6. Sprinkle with feta cheese and serve.
