Ingredients
2 tablespoons olive oil
1 red onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 zucchini, diced

4 eggs

Directions
Heat the olive oil in a large skillet over medium-high heat.
Add the onion and garlic to the skillet and cook, stirring occasionally, for 5 minutes.
Add the bell peppers, zucchini, oregano, basil, red pepper flakes and salt to the skillet and cook, stirring occasionally, for 5 minutes.
Create 4 wells in the skillet with a spoon and crack the eggs into them.
Cover the skillet with a lid and reduce the heat to low. Cook for 5 minutes, or until the eggs are cooked to your desired doneness.
Sprinkle with feta cheese and serve.
