- 1 pound sausage
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 potatoes, diced

- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 bay leaf
- 4 cups chicken broth
- 2 (15-ounce) cans pinto beans, drained and rinsed
- 1 (14-ounce) can diced tomatoes
Directions
- In a large soup pot, cook the sausage over medium heat for 5-7 minutes, or until it is cooked through and lightly browned.
- Add the olive oil, onion, garlic, carrots, celery, potatoes, thyme, oregano, paprika, pepper, salt, and bay leaf to the pot.
- Cook, stirring occasionally, for 5-7 minutes, or until the vegetables are softened.
- Add the chicken broth, pinto beans, and tomatoes to the pot. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the vegetables are tender.
- Remove the bay leaf and serve the soup hot.
