Ingredients

  • 1 pound sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 bay leaf
  • 4 cups chicken broth
  • 2 (15-ounce) cans pinto beans, drained and rinsed
  • 1 (14-ounce) can diced tomatoes

Directions

  1. In a large soup pot, cook the sausage over medium heat for 5-7 minutes, or until it is cooked through and lightly browned.
  2. Add the olive oil, onion, garlic, carrots, celery, potatoes, thyme, oregano, paprika, pepper, salt, and bay leaf to the pot.
  3. Cook, stirring occasionally, for 5-7 minutes, or until the vegetables are softened.
  4. Add the chicken broth, pinto beans, and tomatoes to the pot. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the vegetables are tender.
  5. Remove the bay leaf and serve the soup hot.
