Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper
  • 1 (15-ounce) can pumpkin puree
  • 1 (14.5-ounce) can diced tomatoes
  • 2 cups vegetable broth
  • 1/2 cup coconut milk
  • 1 teaspoon honey or sugar
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
  2. Add the curry powder, ginger, cumin, turmeric, nutmeg, cloves, and cayenne pepper. Cook, stirring, for 1 minute.
  3. Add the pumpkin puree, diced tomatoes, vegetable broth, and coconut milk. Stir to combine. Bring to a boil, then reduce the heat to low. Simmer for 30 minutes.
  4. Stir in the honey or sugar. Season with salt and pepper, to taste.
  5. Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot.
