Directions
Heat the oil in a large pot over medium-high heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
Add the curry powder, ginger, cumin, turmeric, nutmeg, cloves, and cayenne pepper. Cook, stirring, for 1 minute.
Add the pumpkin puree, diced tomatoes, vegetable broth, and coconut milk. Stir to combine. Bring to a boil, then reduce the heat to low. Simmer for 30 minutes.
Stir in the honey or sugar. Season with salt and pepper, to taste.
Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot.
