Ingredients
- 1 cup dried lentils
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 can (14 ounces) diced tomatoes
- 1 cup vegetable broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese
Directions
- Preheat the oven to 375 degrees F.
- In a medium saucepan, combine the lentils, onion, garlic, oregano, basil, tomatoes, vegetable broth, salt, and pepper. Bring to a boil over medium-high heat, then reduce heat to low and simmer, covered, for 15 minutes, or until the lentils are tender.
- Transfer the lentil mixture to an 8x8-inch baking dish and spread the shredded cheese over the top.
- Bake for 15 minutes, or until the cheese is melted and bubbly.
- Serve warm.
