Ingredients

  • 1 cup dried lentils
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can (14 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a medium saucepan, combine the lentils, onion, garlic, oregano, basil, tomatoes, vegetable broth, salt, and pepper. Bring to a boil over medium-high heat, then reduce heat to low and simmer, covered, for 15 minutes, or until the lentils are tender.
  3. Transfer the lentil mixture to an 8x8-inch baking dish and spread the shredded cheese over the top.
  4. Bake for 15 minutes, or until the cheese is melted and bubbly.
  5. Serve warm.
