Ingredients
- 1 bunch asparagus, trimmed and cut into 1" pieces
- 2 oranges, peeled and segmented
- 2 heads endive, leaves separated
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Directions
- Preheat the oven to 400°F.
- Toss the asparagus with a tablespoon of olive oil and season with salt and pepper.
- Spread the asparagus onto a baking sheet and roast for 10-15 minutes, or until tender.
- In a large bowl, combine the asparagus, oranges, endive, olive oil, and lemon juice.
- Toss to combine and season to taste with salt and pepper.
- Serve immediately.
