Ingredients

  • 1 bunch asparagus, trimmed and cut into 1" pieces
  • 2 oranges, peeled and segmented
  • 2 heads endive, leaves separated
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F.
  2. Toss the asparagus with a tablespoon of olive oil and season with salt and pepper.
  3. Spread the asparagus onto a baking sheet and roast for 10-15 minutes, or until tender.
  4. In a large bowl, combine the asparagus, oranges, endive, olive oil, and lemon juice.
  5. Toss to combine and season to taste with salt and pepper.
  6. Serve immediately.
