Ingredients

  • 3 tablespoons olive oil
  • 1/4 cup diced onion
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1/4 cup dry white wine
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • Salt and pepper, to taste

Directions

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the flour and cook, stirring constantly, for 1 minute.
  4. Slowly add the chicken broth, stirring constantly to avoid lumps.
  5. Add the wine and bring to a simmer.
  6. Add the parsley and thyme and season with salt and pepper to taste.
  7. Simmer for 20 minutes, stirring occasionally.
  8. Serve over mashed potatoes, roasted chicken, or other favorite comfort foods.
