In a medium saucepan, melt butter over medium heat. Add the brown sugar and cornstarch and stir until the sugar is melted. Add the apples, cinnamon, nutmeg, and apple juice and stir to combine. Cook, stirring occasionally, until the apples are tender, about 5 minutes.
Roll out half of the pastry and line a 9-inch pie plate with it. Pour in the apple filling. Roll out the remaining pastry and place it over the top of the pie. Trim and flute the edges.
Bake for 30 minutes, or until the crust is golden brown. Let cool before serving.
