Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup flaked coconut

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Mix in the flour mixture alternately with the milk. Stir in the pineapple and coconut.
  5. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool for 10 minutes in the pan before turning out onto a wire rack to cool completely.
