Ingredients

  • 1 cup cooked red beans
  • 1 cup cooked white rice
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1/4 cup diced jalapeno pepper
  • 2 tablespoons creole seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup water
  • Oil for frying

Directions

  1. In a large bowl, combine the cooked red beans, cooked white rice, diced green bell pepper, diced onion, diced celery, and diced jalapeno pepper.
  2. Add the creole seasoning, black pepper, garlic powder, cayenne pepper, and paprika. Mix well.
  3. In a separate bowl, combine the all-purpose flour, cornstarch, and baking powder. Slowly add the water and mix until a thick batter forms.
  4. Add the wet ingredients to the bowl with the dry ingredients and mix until everything is well combined.
  5. Heat the oil in a pan over medium-high heat. Once the oil is hot, drop spoonfuls of the batter into the pan and fry until golden brown on both sides, about 2-3 minutes per side.
  6. Remove the fritters from the pan and place on a paper towel-lined plate to absorb any excess oil.
  7. Serve hot and enjoy!
