- 1 cup cooked red beans
- 1 cup cooked white rice

- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/2 teaspoon baking powder
- 1/2 cup water
- Oil for frying
Directions
- In a large bowl, combine the cooked red beans, cooked white rice, diced green bell pepper, diced onion, diced celery, and diced jalapeno pepper.
- Add the creole seasoning, black pepper, garlic powder, cayenne pepper, and paprika. Mix well.
- In a separate bowl, combine the all-purpose flour, cornstarch, and baking powder. Slowly add the water and mix until a thick batter forms.
- Add the wet ingredients to the bowl with the dry ingredients and mix until everything is well combined.
- Heat the oil in a pan over medium-high heat. Once the oil is hot, drop spoonfuls of the batter into the pan and fry until golden brown on both sides, about 2-3 minutes per side.
- Remove the fritters from the pan and place on a paper towel-lined plate to absorb any excess oil.
