Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 1/2 cups white sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups chopped dried fruit and nuts
- 1/2 cup white sugar for topping
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a medium bowl, stir together the flour, baking soda, baking powder and salt.
- In a large bowl, cream together the butter and 1 1/2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk.
- Fold in the chopped dried fruit and nuts. Spread batter evenly into the prepared pan.
- Sprinkle the remaining 1/2 cup sugar over the top of the cake. Bake for 35 to 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
