Ingredients

  • 2 lbs chicken thighs or breast
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup soy sauce
  • 1/2 cup white distilled vinegar
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 3 bay leaves
  • 3 tablespoons brown sugar
  • Fresh parsley, for garnish

Directions

  1. In a large bowl, combine chicken, garlic, ginger, soy sauce, vinegar, pepper, and olive oil. Stir to combine.
  2. Transfer the mixture to the slow cooker, making sure to coat the chicken evenly with the sauce.
  3. Add the bay leaves and brown sugar to the slow cooker.
  4. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours.
  5. Once the chicken is cooked through, remove the bay leaves and transfer the chicken to a serving dish. Garnish with fresh parsley.
