Ingredients
2 tablespoons vegetable oil
1/2 cup minced shallots
3 cloves garlic, minced
1 tablespoon minced ginger

Directions

Add the chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
Add the rice noodles, shrimp, and chicken and simmer for 5 minutes.
Stir in the cilantro and mint, and season with salt and pepper to taste.
Serve the soup in individual bowls, garnished with lime wedges.
