Ingredients
- 2 tablespoons vegetable oil
- 1/2 cup minced shallots
- 3 cloves garlic, minced
- 1 tablespoon minced ginger
- 2 tablespoons fish sauce
- 2 tablespoons light brown sugar
- 1/4 cup lime juice
- 2 quarts chicken broth
- 1/2 pound rice noodles
- 1/2 pound cooked shrimp, diced
- 1/2 pound cooked chicken, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 2 limes, cut into wedges
Directions
- In a large pot, heat the vegetable oil over medium-high heat. Add the shallots, garlic, and ginger, and sauté for 2 minutes.
- Add the fish sauce, brown sugar, and lime juice, and stir to combine. Cook for 1 minute.
- Add the chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Add the rice noodles, shrimp, and chicken and simmer for 5 minutes.
- Stir in the cilantro and mint, and season with salt and pepper to taste.
- Serve the soup in individual bowls, garnished with lime wedges.
