Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 cup minced shallots
  • 3 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 2 tablespoons fish sauce
  • 2 tablespoons light brown sugar
  • 1/4 cup lime juice
  • 2 quarts chicken broth
  • 1/2 pound rice noodles
  • 1/2 pound cooked shrimp, diced
  • 1/2 pound cooked chicken, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 limes, cut into wedges

Directions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the shallots, garlic, and ginger, and sauté for 2 minutes.
  2. Add the fish sauce, brown sugar, and lime juice, and stir to combine. Cook for 1 minute.
  3. Add the chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  4. Add the rice noodles, shrimp, and chicken and simmer for 5 minutes.
  5. Stir in the cilantro and mint, and season with salt and pepper to taste.
  6. Serve the soup in individual bowls, garnished with lime wedges.
