Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon red pepper flakes
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the cumin, coriander, turmeric, garam masala, and red pepper flakes and cook for 1 minute.
  4. Add the chicken and cook, stirring occasionally, until the chicken is cooked through, about 5 minutes.
