Ingredients
- 1 lb ground beef
- 1 onion, diced
- 1 green pepper, diced
- 1 garlic clove, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup beef broth
- 1/2 cup ketchup
- 2 cups shredded cheddar cheese
- 2 cups precooked white rice
- 2 tablespoons butter
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook the ground beef, onion, green pepper, garlic, Italian seasoning, salt, and pepper until the beef is browned and the vegetables are tender. Drain off fat.
- Stir in the beef broth, ketchup, and 1 cup of cheese. Simmer for 10 minutes.
- In a large bowl, combine the cooked beef mixture, rice, and butter. Mix well.
- Spread the mixture into a 9x13 inch baking dish. Sprinkle with the remaining cheese.
- Bake, uncovered, for 25 minutes or until cheese is melted and bubbly.
