Ingredients
- 1 cup quinoa
- 1 cup asparagus, cut into 1-inch pieces
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup sun-dried tomatoes, diced
- 1/4 cup pine nuts, toasted
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Directions
- In a medium saucepan, bring 1 1/2 cups of water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes. Remove from heat and let stand for 5 minutes.
- Meanwhile, in a medium bowl, combine asparagus, feta cheese, parsley, sun-dried tomatoes, and pine nuts. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.
- Add the cooked quinoa to the bowl with the vegetables and toss to combine. Drizzle with the olive oil mixture and toss again. Serve and enjoy!
