Ingredients
- 1 prepared 9-inch pie crust
- 3/4 cup white sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 2 cups half-and-half cream
- 2 large eggs
- 2 tablespoons butter
- 2 teaspoons vanilla extract
- 2 cups fresh blueberries
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan, combine the sugar, cornstarch, salt, nutmeg, and half-and-half cream. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute.
- In a small bowl, beat eggs with a fork. Gradually stir about 1 cup of the hot mixture into the eggs. Pour egg mixture into saucepan. Cook and stir over low heat for 2 minutes.
- Remove from heat. Stir in butter and vanilla. Cool to room temperature.
- Pour cooled filling into the prepared pie crust. Arrange the blueberries over the filling.
- Bake in preheated oven for 15 minutes. Reduce oven temperature to 325 degrees F (165 degrees C), and bake for an additional 45 minutes.
- Cool pie to room temperature before serving.
