Ingredients

  • 1 prepared 9-inch pie crust
  • 3/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 cups half-and-half cream
  • 2 large eggs
  • 2 tablespoons butter
  • 2 teaspoons vanilla extract
  • 2 cups fresh blueberries

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium saucepan, combine the sugar, cornstarch, salt, nutmeg, and half-and-half cream. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute.
  3. In a small bowl, beat eggs with a fork. Gradually stir about 1 cup of the hot mixture into the eggs. Pour egg mixture into saucepan. Cook and stir over low heat for 2 minutes.
  4. Remove from heat. Stir in butter and vanilla. Cool to room temperature.
  5. Pour cooled filling into the prepared pie crust. Arrange the blueberries over the filling.
  6. Bake in preheated oven for 15 minutes. Reduce oven temperature to 325 degrees F (165 degrees C), and bake for an additional 45 minutes.
  7. Cool pie to room temperature before serving.
