- 4 cups water
- 1 cup yellow cornmeal
- 1 teaspoon salt
- 1/4 cup butter
- 1/4 cup grated Parmesan cheese
Directions
- In a medium saucepan, bring the water to a boil.
- Reduce the heat to a low simmer and slowly pour in the cornmeal while whisking constantly.
- Continue to whisk until the polenta is smooth and free of lumps.
- Add the salt and butter, and stir to combine.
- Cover the pan and cook for 15 minutes, stirring every few minutes.
- Remove the lid and cook for an additional 5 minutes, stirring constantly.
- Stir in the Parmesan cheese, and serve immediately.
