Ingredients
- 2 boneless, skinless chicken breasts, cut into cubes
- 1/4 cup extra-virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/2 cup Caesar salad dressing
- 1/2 cup croutons
- 1/2 cup grated Parmesan cheese
- 1 head Romaine lettuce, chopped
- 6 wooden skewers
Directions
- In a medium bowl, combine the chicken, olive oil, lemon juice, garlic, Italian seasoning, salt and pepper. Mix to combine and set aside.
- In a large bowl, combine the Caesar dressing, croutons, Parmesan cheese, and Romaine lettuce and mix to combine.
- Thread the chicken cubes onto the skewers and place on a baking sheet. Bake in a preheated oven at 375°F for 15-20 minutes, or until cooked through.
- To assemble the salad on a stick, place a cube of chicken onto a skewer and then alternate with pieces of lettuce and crouton. Drizzle with the Caesar dressing and enjoy.
