Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 zucchini, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Add the bell peppers, zucchini, cayenne pepper, paprika, thyme, oregano, salt, and pepper. Stir to combine.
  4. Cook, stirring occasionally, until the vegetables are tender, about 10-15 minutes.
  5. Serve warm.
