Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons white sugar
  • 2 eggs
  • 2 cups milk
  • 2 tablespoons butter, melted
  • 1 teaspoon orange zest
  • 1/2 cup dried cranberries

Directions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the eggs, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Stir in the orange zest and cranberries.
  5. Heat a lightly greased griddle or skillet over medium-high heat.
  6. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until the edges are dry and bubbles form on the surface.
  7. Flip the pancakes and cook until golden brown on the other side.
  8. Serve with butter and syrup.
