Ingredients

  • 1 lb. ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced jalapeno pepper
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup Mexican-style cheese, shredded
  • 1/2 cup salsa

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, mix together the ground beef, breadcrumbs, egg, garlic powder, cumin, chili powder, paprika, salt, and pepper.
  3. Add the diced onion, bell pepper, jalapeno pepper, cilantro, and cheese. Mix until all ingredients are combined.
  4. Form mixture into 1-inch meatballs and place on a greased baking sheet.
  5. Bake for 15 minutes, or until meatballs are cooked through.
  6. Remove from oven and transfer to a serving dish. Top with salsa and serve.
