Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 3 cups cooked penne pasta
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the chicken pieces and season with oregano, basil, red pepper flakes, salt and black pepper. Cook until the chicken is browned and cooked through, about 5 minutes.
  3. Add the chicken broth and cream to the skillet and stir to combine. Bring the mixture to a simmer and cook for 5 minutes.
  4. Add the cooked pasta to the skillet and stir to combine. Cook for 2 minutes, stirring occasionally.
  5. Stir in the Parmesan cheese and cook for 1 minute.
  6. Serve the chicken-pasta garnished with fresh parsley.
