Ingredients
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 3 cups cooked penne pasta
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
- Add the chicken pieces and season with oregano, basil, red pepper flakes, salt and black pepper. Cook until the chicken is browned and cooked through, about 5 minutes.
- Add the chicken broth and cream to the skillet and stir to combine. Bring the mixture to a simmer and cook for 5 minutes.
- Add the cooked pasta to the skillet and stir to combine. Cook for 2 minutes, stirring occasionally.
- Stir in the Parmesan cheese and cook for 1 minute.
- Serve the chicken-pasta garnished with fresh parsley.
